My Favorite Food Pins

Pinterest can be a black hole that sucks all your time, confidence, and creativity away.

I’ll be honest. There are many pins that I will never attain to. The pins of $500,000 houses. The pins of gourmet desserts. The pins of expensive brand name clothing.

But there are some pins that I can use as a diving board to launch me into a creative place. This is a board I made to give me ideas when I made my mom a wreath last year for Mother’s Day. This board helped me plan my sister’s baby shower.

Pinterest has been especially helpful as I have taken foods out of my diet while nursing both of my sons. I am currently dairy-free, gluten-free, and soy-free (mostly) to help with my youngest’s spit up; and I am tree-nut free to eliminate his eczema. I went from being able to use canned cream of anything to being able to use very few pre-made or processed items.

So, today I want to share a few favorite recipes I found on Pinterest and use over and over.

The first are these Banana Chia Breakfast Cookies from Savvy Naturalista. These are wonderful cookies that you can eat as a snack or for a good healthy breakfast on the go. Sometimes, I add a vegan protein powder to the mix to make them pack an extra punch.

The second is this amazing Sweet Potato Casserole from Meaningful Eats. I made this for my first Thanksgiving avoiding dairy and gluten. It is SO good! Many people who eat it are surprised that it has no butter or dairy of any kind in it. Instead it uses coconut oil and an alternative milk. Everyone who has eaten it has loved it!

The third recipe I will share is one I found recently, but it is mom, toddler, and husband approved! I had a bunch of over ripe bananas, but didn’t want a complicated banana bread recipe that involved a mixer or lots of steps. This Super Simple Banana Bread from Eazy Peazy Mealz fit the bill. I made it using just two bowls. I have used a loaf pan as well as muffin pans. When you make it as muffins, the cooking time goes down to about 15-20 minutes.

I typically use this gluten-free flour from Bob’s Red Mills when cooking or baking. I have found that it translates perfectly without adding anything extra like you sometimes have to with other gluten-free flours.
